Ingredients

Sweet potato (cubed)

Curly kale (chopped)

Romanesco cabbage florets

Olive oil or melted butter

Haricots vert (chopped in half)
Salt and Pepper 

Method

  1. Wash and chop the vegetables as described and toss together with the oil or melted butter in a bowl.  Lay out on an ovenproof tray and season generously with salt and pepper.
  2. Lay the fish fillets on top of the vegetables and bake all together in a preheated oven at 350°F for 25 minutes.

Serving tip

Top Tip: Serve with freshly baked bread and a wedge of lemon or lime.
