Curly kale (chopped)
Haricots vert (chopped in half)
Romanesco cabbage florets
Sweet potato (cubed)
Olive oil or melted butter
Salt and Pepper
- Lay the fish fillets on top of the vegetables and bake all together in a preheated oven at 350°F for 25 minutes.
- Wash and chop the vegetables as described and toss together with the oil or melted butter in a bowl. Lay out on an ovenproof tray and season generously with salt and pepper.
Top Tip: Serve with freshly baked bread and a wedge of lemon or lime.
